Healthy, Colorful & Refreshing Fruit Salads & Desserts !

This is the first of a dozen fruit recipes.

Did you know that after sorbet, gelato, and chocolate everyone’s favorite dessert is fruit? True indeed!We’re all familiar with everyday fruit salad combinations. Great for dieters, here are thirteen options to let your imagination run wild. Enjoy them fresh “as is” as dessert, a party side dish, a summer lunch entre, or a snack.

First you want to think of your audience. Will you be having guests or is this for a family meal? Even fussy children will love these fruit salads.

The “International Surprise”
Healthy, Colorful & Refreshing Fruit Salads & Desserts !
1)      Medium size Kiwi (firm to the touch and has a “fragrant smell”
2)      Small Fresh Pineapple (or unsweetened slices)
3)      2 Mandarin Oranges (or a small can)
4)      Handful of Fresh Strawberries
5)      1 Fresh Banana
6)      Handful of Fresh Blueberries
Prepare the Blueberries
Take a handful of fresh blueberries and remove any left over stems
Run under cold water to clean any remaining items
Place on a paper towel to dry
Don’t slice them. They are just the right size.
Place them in a colander or a large mixing bowl.
Prepare the Pineapple
Place the pineapple of a clean surface standing straight up.
With a sharp knife, start from the very top of the pineapple
and proceed by taking the skin off.
Do this until the only thing left on the pineapple is the bottom and the top.
Turn the pineapple over on its side, cut the entire top off as well as the bottom.
Cut the pineapple up in chunks

Place the pineapple wedges in the colander with the blueberries.

Gently mix the blueberries and pineapples.
Prepare the Banana
Peel the banana and throw the peeling in the garbage
Do not put the peel in the sink Unlike the Mandarin
Orange peelings, banana peelings will jam the garbage
disposal. It was embarrassing to learn that one.
Slice the banana into 1/4 inch slices.
Place the banana slices in the colander
Prepare the Strawberries
Take a handful of fresh strawberries and remove any left over stems
Run under cold water to clean any remaining items
Place on a paper towel to dry
Slice the strawberries.
Place the strawberry slices in the colander
Prepare the Mandarin Oranges
Peal the Mandarin Oranges as you would any Orange
Separate the sections
Place the peelings in the garbage disposal in the sink and
Turn on the water and grind the peelings for a most delightful
Fragrance (this also works well with lemon peelings) hmmmm
Place the mandarin orange sections in the colander
It’s best to gently mix the fruit again at this point.
Prepare the Kiwi
Kiwi is somewhat delicate, so don’t squish.
Peel the kiwi with a paring knife; remove the brown skin.
Rinse the fruit under cool water to remove any remaining skin.
Slice the fruit into thin slices.
Place the Kiwi slices in the colander.
Very gently mix the kiwi slices with the other fruit.
Take a large spoon and gently scoop a few spoonfuls into a bowl.
You may want to put a dab of whipped creme on top, or simply eat it as it is.
You now have a mouth watering combination of healthy salad (or dessert).

Kiwi is good for: Vitamin C, Vitamin K, Potassium & Phosphorus
Fresh Pineapple is good for: No Fat or Cholesterol, Potassium & Calcium and Iron, Fiber, Vitamin C
Mandarin Oranges for: Vitamin A, Folic Acid, Vitamin C, Fiber, Suppresses the Hunger Response
Strawberries are for:  Calcium, Magnesium, and potassium
Bananas are good for: Vitamin A, Thiamine, Riboflavin, Niacin, Vitamin B6, and Folic Acid, and are Rich in Potassium and other Trace Minerals.
Blueberries are good for: Vitamin C, Vitamin E and Fiber

Vitamin C provides the collagen necessary for skin and blood vessel repair and maintenance.

Vitamin A produces retinal pigments needed for vision.
Folic acid is essential, along with the rest of the B vitamins, for the transformation of food into energy
Potassium to balance the fluid level blood pressure
